Shishito is a classic Japanese sweet pepper known for its thin, wrinkled skin and occasional spicy surprise. Most peppers are mild at 50–200 Scoville Heat Units, though about 10% may reach 1,000 SHU, especially under heat or sun stress. The slender, finger-length fruits grow 2–4 inches long, ripening from bright green to red. Their tender, crisp flesh has a sweet, grassy, slightly smoky flavor.
