Early White Bush Scallop is a historic, open-pollinated summer squash cultivated by Native Americans and in 16th-century Europe. Its flat, disk-shaped fruits have deeply scalloped edges and ripen from pale green to creamy white. At full maturity, they measure 5-8 inches across and about 3 inches tall, weighing 2-3 pounds; harvest at 4-6 inches for tenderness. The mild, sweet, nutty flesh is firm, tender, and creamy when cooked. Compact bushy plants need less space than vining squash.
